This dish is my boyfriend's favourite to order every time we're at a Chinese restaurant. I'll admit, it is pretty delicious but it is fried rice, it shouldn't be hard to make, right? It doesn't require too many ingredients, but there's a lot of preparation for this dish before the cooking process and the cooking of the rice requires a lot of attention. This is my attempt, I think it turned out decent but probably not as good as the restaurants.
Ingredients
1 1/2 cup glutinous rice2 dried Chinese sausage
3 dried scallop
6 dried shrimp
6 dried shiitake mushroom
2 eggs
4 tsp water
1 stalk green onion, chopped for garnish
2 cup water, including water from dried scallop
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
2 tsp sugar
Preparation
1. Soak glutinous rice for at least 3 hours.2. Soak dried shiitake mushrooms, dried shrimp and dried scallop in separate bowls until softened.
Directions
1. Chop shiitake mushroom and shrimp into dices. Shred the scallop into small pieces. Save the soaking water of dried scallop and add more water to make it 1 cup.2. Add 2 teaspoons of water into the egg, beat the egg and season with salt.
3. Heat oil in a non-stick frying pan and add the beaten egg. Move the pan around to spread the egg into a thin disc. Fry both sides until golden and set aside. When it cools down, cut the egg into thin strips.
4. Add diced Chinese sausage into frying pan. When some oil releases from the sausage, add shiitake mushrooms, shrimp, scallop and saute until cooked. Set aside.
5. Rinse glutinous rice, wash away the starch and drain well. Add 2 table spoons of oil in frying pan. Add glutinous rice and stir to coat the rice with oil. Then add 2 tablespoons of water at a time, spread rice in an even layer and cook on medium heat. Add more water as the water is drying up. Repeat the steps of stirring, spreading the rice, adding small amounts of water in between until the rice is cooked thoroughly. This whole process should take about 25-30 minutes.
6. When the rice is cooked, add soy sauce and sugar and combine well. Adjust seasoning according to your preference.
7. Combine egg, chinese sausage, shiitake mushrooms, shrimp, and scallop with the rice and stir.
8. Garnish with green onions.
