Healthy Recipe: Quinoa

Quinoa has a very high protein content. It is also a good source of dietary fiber, magnesium, iron, and calcium to name a few. It can be cooked in many different ways, but I like to enjoy it like a salad.

Ingredients

2 cups Quinoa
2 tomatoes
1/2 green pepper
1/2 onion
5 cloves of garlic
1 jalapeno
1/2 a bunch of cilantro
1 can corn

Sauce

2 limes
1 tsp salt
1/4 cup olive oil
1 tbsp taco seasoning mix
1 tsp of tabasco

Directions

1. Rinse Quinoa with water, strain and put into a pot. Add 3 cups of water and let it simmer for 20 minutes, stirring occasionally.
2. While Quinoa is cooking, chop tomatoes and green pepper into bite size and combine them in a bowl.
3. Mince garlic, jalapeno, and onion and add to the bowl. Be sure to remove the seeds from jalapeno.
4. Chop up the leaves of cilantro finely and add to the bowl.
5. Strain corn and add to the bowl.
6. Combine all ingredients for sauce in a separate bowl and mix well.
7. Once Quinoa is finished cooking, add everything together and stir.
8. Enjoy by itself, with tortilla chips or flour tortilla.
